What you need:
1 medium avocado,
2 slices of toast,
sea salt and black pepper to taste
fresh chopped tomatoes.
Preparation: Preheat your oven to about 425°C.
Crack the eggs in a bowl and keep them aside.
Cut the avocado in half and get rid of the seeds.
Take note that the cavity in the avocado should be big enough so it fits one small egg. Next, in a medium sized baking dish, keep the avocado in such a way that the raw egg doesn’t spill out.
Gently scoop out the egg yolk and then place it in the avocado cavity.
Then spoon the egg white into the avocado till it’s filled up. Add salt and black pepper on the eggs.
Post this, place the baking dish inside the oven and bake for about 20 minutes.
Once it’s done, add chopped tomatoes on top and you can serve this dish with ketchup.
This one’s a healthy egg recipe and can be had as a snack or even for lunch.
