Veggie balls


Ingredients
  • 1 carrot cut into cubes.
  • 5-6 flowers of a cauliflower.
  • 1/4 c peas
  • 1 medium shredded potatoes
  • 2 shredded zucchini
  • 1 tbsp masala for chaat
  • 2 tbsp chopped coriander.
  • 4 chopped green chili
  • 2 tbsp bread crumbs
  • 3 tbsp flour
  • 1/4 c cooked rice
  • 1/3 c shredded mozzarella
  • salt & pepper to ur taste.
  • 2 beaten eggs
  • 1/2 c bread crumbs + 2 tbsp corn flour
  • oil for deep frying.
Directions
  1. In a pot boil Cauliflower, carrot & peas till half done, strain & allow to cool.
  2. In a bowl combine Potatoes, zucchini, Masala, coriander, chili,bread crumbs,flour,rice,mozzarella, salt/ pepper & drained veggies (making sure to squeeze out all the water).
  3. Mix with hand ( the mix should be dry).
  4. Dip the balls in eggs then in bread crumb mix.
  5. Heat oil & fry the balls till golden. Serve hot with chutney or dips.
