Toast Samosas

- 2 tbsp oil
- 1 chicken breast cut into thin small strips.
- 1 medium onion finely chopped into small cubes.
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garam masala
- 2 tbsp chopped coriander
- 1 tbsp chopped mint
- 2 green chili finely chopped
- 4 tbsp shredded mozzarella cheese
- 12 slices of toast
- 2 beaten eggs
- 1/2 c bread crumbs
- Oil for deep frying
- In a pan heat oil & fry the Onion till transparent.
- Add the Chicken,& fry until it changes it's colour.
- Add salt, pepper & garam masala Keep stiring & frying for 10 min.
- Remove from heat, Add the greens & toss to combine all.
- Allow to cool then add the cheese & toss again to combine all together.
- Roll out the breads with a rolling pin till flat & take off the sides.
- With a large circle cookie cutter cut each toast out.
- Fill each circle with filling & fold into half circle & stick the edges with some beaten egg.
- Carry on doing the same with all the toasts & cover with a wet cloth so that they don't dry out.
- Dip each samosa into egg then into bread crumbs.
- Heat oil & deep fry the samosas till nice & golden.
- Serve with your choice of chutney & tea.
