INGREDIENTS
600g mascarpone cheese
230g eggs
113g caster sugar
80g milk
190g savoiardi biscuits
400ml strong black coffee
200g Amaretti biscuits, crushed
80g cocoa powder

PREPARATION
1. Use a hand blender to mix together mascarpone, eggs, sugar and milk. Pass mixture through a sieve, whip it until light in colour then spoon it into a piping bag.
2. Soak savoiardi biscuits in coffee.
3. To assemble, use half the Amaretti biscuit crumbs to place a layer at the bottom of each serving glass.
4. Use half the soaked savoiardi biscuits to place a layer on top of the Amaretti crumbs in each serving glass.
5. Use half the cream to pipe a layer on top of the savoiardi biscuits.
6. Repeat the layers for each serving glass, dust with cocoa powder and serve immediately.
