Phodnichi Poli (Leftover Chapathi)

- 5 leftover chapathi
- 1 onion finely chopped
- 1 tomato chopped
- 10 cauliflower florets chopped to small sizes
- 1 carrot grated
- 1 tbsp sweet corn
- 2 curry leaves
- 4 garlic pods
- 1 tsp coconut
- 2 sprigs of cilantro (chopped)
- 5 cashew nuts
- 1 tsp Mustard seeds
- 1 tsp Red chilli powder
- 1/2 tsp asefotida
- 1/4 tsp turmeric powder
- Salt
- 1 tbsp oil
- 1 lemon
- Grind in mixer till it becomes small pieces like thin poha or please chop into small pieces.
- Heat oil in a kadai.Add mustard seeds.When they crackle, add hing, curry leaves and then garlic,onion and cashew nuts.Saute till they are transparent.
- Then add tomatoes,fry for 2 minutes.
- Add grated carrots,cauliflower,Sweet corn, haldi, red chilli powder. Close the lid and cook for about 5 minutes. No need to add water.
- Add salt.Switch off the gas.
- squeeze the lemon and mix well.Garnish with scraped coconut and cilantro.
- It tastes well and soft to eat.
