Moong dal Kosambari

- 1 cup Yellow Moong dal (Soaked for 1/2 hour)
- 1/2 cup scraped fresh Coconut (can use frozen also, thaw well before use)
- 2 finely chopped Green chillies
- 1/2 cup chopped Cucumber
- 1/2 cup grated Carrot
- 1/4 cup chopped Cilantro (coriander leaves)
- 2 tsp Vegetable Oil
- 2 tsp Mustard seeds
- a pinch of Hing
- Salt to taste
- 2 tsp Lemon juice (optional)
- Drain all the water from the Dal & put it in a mixing bowl.
- To this add Coconut, Cilantro, Cucumber & Carrot. Mix well.
- Heat Oil in a kadai. Add Mustard seeds & Hing. Once the seeds splutter, add Green chillies. Fry for 15 secs.
- Pour it over the Dal mixture. Add Salt & lemon juice. Mix well & serve.
