Recipe Spanish chicken

200g skinless chicken piece, breast for example
10ml lemon juice
5g paprika
2 eggs
salt and ground black pepper, to taste
1 cup all-purpose flour
1/2 cup fine breadcrumbs
60ml olive oil
lemon and potato wedges, to serve
basil leaves, for garnishing

For the mayonnaise mix, blend:

120ml mayonnaise
30ml pickled capers, drained and chopped
30ml fresh parsley, chopped

1. Sprinkle lemon juice and paprika over chicken.

2. Beat eggs with a pinch of salt and pepper. Dunk chicken piece first in flour, then egg mixture, then coat with breadcrumbs. Chill chicken for 30 minutes.

3. Heat oil in a heavy pan and fry chicken on high heat, turning after 3 minutes, until golden on both sides

4. Serve with lemon and potato wedges and mayonnaise mix, garnished with basil leaves.
