Recipe Panna cotta with mango

INGREDIENTS
10g gelatin sheet
250ml cream
100g caster sugar
1 vanilla bean pod, split lengthwise and
seeds removed
250ml mango purée
250 whipped cream
1 mango, chopped
redcurrants, mint leaves and blueberries, for garnishing

PREPARATION
1. Soften gelatin sheet by soaking it in cold water for
5 minutes. Set aside.
2. In a pan heat half the cream with the sugar, vanilla seeds and pod and bring to a boil. Remove from heat and reserve pod for garnishing.
3. Fold in mango purée, then add the softened gelatin sheet, stir well and cool the mixture in an ice bath.
4. Add whipped cream and the remaining cream to the mixture and pour into serving bowls. Allow to set in the fridge, about 30 minutes.
5. Top with mango pieces and serve garnished with redcurrants, mint leaves, vanilla beans and blueberries.
