Ingredients
For chocolate and mascarpone cake base
- 250g 55 per cent dark chocolate
- 250g unsalted butter
- 150g mascarpone cheese
- 375g granulated sugar
- 400g whole egg
- 150g cake flour
- 60g egg yolk
- 60g granulated sugar
- 50g whole egg
- 250g 55 per cent dark chocolate
- 350g whipped cream
Preparation
1. Melt the chocolate and butter in a water bath. Add the mascarpone and mix until all is incorporated.
2. Mix sugar and eggs until fluffy then add chocolate mix. Add the flour slowly. Pour in a buttered cake ring. Bake at 180°C for about 25 minutes.
3. For chocolate mousse, whisk eggs and sugar in a water bath to make a sabayon. Melt chocolate and mix with sabayon. Fold in whipped cream and set on cake base. Serve.
