Ingredients

For chocolate and mascarpone cake base

  • 250g 55 per cent dark chocolate
  • 250g unsalted butter
  • 150g mascarpone cheese
  • 375g granulated sugar
  • 400g whole egg
  • 150g cake flour
For chocolate mousse

  • 60g egg yolk
  • 60g granulated sugar
  • 50g whole egg
  • 250g 55 per cent dark chocolate
  • 350g whipped cream

Preparation
1. Melt the chocolate and butter in a water bath. Add the mascarpone and mix until all is incorporated.

Mix sugar and eggs until fluffy then add chocolate mix. Add the flour slowly. Pour in a buttered cake ring. Bake at 180°C for about 25 minutes.

For chocolate mousse, whisk eggs and sugar in a water bath to make a sabayon. Melt chocolate and mix with sabayon. Fold in whipped cream and set on cake base. Serve.
