Recipe Couscous pilaf

INGREDIENTS

  • 100g butter or oil
  • 2g garam masala
  • 2 bay leaves
  • 100g onion, sliced
  • 100g chickpeas, soaked overnight and boiled
  • 10g ginger-garlic paste
  • 1kg medium couscous, uncooked
  • 500ml chicken broth, hot water or vegetable stock
  • salt, to taste
  • coriander leaves, chopped, for garnishing


PREPARATION
1. Heat oil or butter in a large saucepan, add garam masala, bay leaves and onion, cook until golden brown. Add chickpeas, ginger-garlic paste, fry for 4 more minutes.

2. Add couscous and stir-fry. Add broth or stock and season to taste. Let the couscous boil until the liquid reduces, then cover the pan and simmer on low heat for 10 minutes. Remove from heat and let the couscous rest covered for 3-5 minutes. Before serving, fluff the couscous with a fork. Garnish with fried onions.
