INGREDIENTS
- 5g ghee (clarified butter)
- 45g brioche
- 5g sugar
- 60ml milk
- 2g saffron
- 80g pistachio ice cream
- 5g almonds, sliced
- 2g raisins
- 10g pistachio biscotti
- 2g icing sugar
PREPARATION
1. Spread ghee on the bread and sprinkle with sugar. Toast the bread under a hot grill until slightly crisp.
2. To make saffron sauce, bring milk to a boil in a pan and add saffron. Simmer, stirring continuously, until milk thickens and coats the back of the spoon.
3. To serve, pour saffron sauce on a plate, place a slice of bread on top and add scoops of pistachio ice cream. Garnish with almonds, raisins, biscotti and icing sugar.
