Recipe Gazpacho Andaluz

INGREDIENTS
  • 100g white bread slices, crusts removed and cut into small pieces
  • 800g large tomatoes, chopped
  • 2 green peppers, chopped
  • 1 clove garlic, chopped
  • 1 cucumber, peeled, seeded and diced
  • 60ml tomato juice
  • 60ml extra-virgin olive oil
  • 40ml white vinegar
  • salt and pepper, to taste
  • bread sticks, to serve
  • spring onions, for garnishing

PREPARATION
1. Mix all ingredients in a bowl and refrigerate overnight.
2. Remove mixture from fridge and blend until smooth.
3. Strain and adjust seasoning.
4. Serve garnished gazpacho with bread sticks.
