INGREDIENTS
- 100g white bread slices, crusts removed and cut into small pieces
- 800g large tomatoes, chopped
- 2 green peppers, chopped
- 1 clove garlic, chopped
- 1 cucumber, peeled, seeded and diced
- 60ml tomato juice
- 60ml extra-virgin olive oil
- 40ml white vinegar
- salt and pepper, to taste
- bread sticks, to serve
- spring onions, for garnishing
PREPARATION
1. Mix all ingredients in a bowl and refrigerate overnight.
2. Remove mixture from fridge and blend until smooth.
3. Strain and adjust seasoning.
4. Serve garnished gazpacho with bread sticks.
