Healthy soyabean salad

- 1 cup cooked soyabeans
- 1 diced onion
- 1 diced tomato
- 1 diced capsicum
- 1 tbsp coriander leaves, finely chopped
- 1 tbsp mint leaves, finely chopped
- 1 green chilly, finely chopped
- 1/4 tsp freshly ground black paper pwd
- 1 tsp. lemon juice
- diced carrot, cabbage, sweet corn etc (optional)
- Salt to taste
- Soak soyabeans in enough water for atleast 8-10hrs.
- Drain water, add fresh water and pressure cook with 1\2 t.sp.salt for three whistles
- In a bowl mix all the ingrediants except soyabeans
- Drain water from soyabeans and allow it to cool
- Add soyabeans and mix gently
- Transfer the contents in a serving dish
- Garnish with a mint sprig
