GOLDEN PINEAPPLE CARROT COFFEE CAKE

INGREDIENTS
Pineapple slice, canned , chopped
250 grams
Carrots, grated
1 cup
Orange juice
1/3 cup
Sugar
1/3 cup
Coffee powder
1/2 teaspoon
Egg
1
All purpose flour
1 1/2 cups
Soda bicarbonate
1 1/2 teaspoons
Cinnamon powder
1 teaspoon
Salt
1/4 teaspoon
Oil
3 tablespoons
Topping

Sugar
1/3 cup
Walnuts, finely chopped
1/3 cup
Cinnamon powder
3/4 teaspoon

METHOD
Preheat oven to 180˚C. Grease a cake tin with oil. In a medium sized bowl mix together grated carrot, chopped pineapple. Add orange juice and mix. Add sugar, coffee powder and mix. Break the egg into it and mix. Sieve flour and baking soda into the egg mixture. Mix with a light hand. Add cinnamon powder, a pinch of salt and mix. Add oil and mix. Pour the batter into the greased cake tin.In another bowl mix together chopped walnuts, sugar and cinnamon powder. Sprinkle this over the cake batter. Bake in the preheated oven at 180˚C for twenty to twenty five minutes. Cool slightly. Slice and serve.​
