Yummy Carrots

Ingredients
  • 3 Big Grated Carrots
  • 3/4 cup grated Coconut
  • 3 tsp Vegetable oil
  • 2 tsp Mustard seeds
  • a pinch of Asafoetida (hing)
  • 2 tsp Urad dal
  • 4 chopped Green chillies
  • 2 tsp Lemon juice(optional)
  • Salt to taste
  • 1/4 cup chopped Cilantro (coriander leaves)
Directions

Wash & grate the Carrots.
  1. Heat Oil in a pan. Add Mustard seeds & Hing.
  2. Once the seeds splutter, add Urad dal & Green chillies. Fry till the dals turns light brown.
  3. Take the grated Carrots in a serving bowl. Add the Tadka, grated Coconut, lemon juice & Salt. Mix well.
  4. Add chopped Cilantro & serve.
