Recipe Sweet Potato Fries

Creating a unique meal for the family that cooks in just one hour or less often seems impossible. With just a little bit of preparation and a pre-heated oven, you can serve up a dinner that is anything but ordinary using this great recipe.

INGREDIENTS
2 large sweet potatoes
10 mL (2 tsp.) olive oil
5 mL (1 tsp.) dried thyme
5 mL (1 tsp.) kosher salt
1 mL (1/4 tsp.) fresh ground black pepper

DIRECTIONS
Preheat oven to 220°C (425°F). Cut the sweet potato in half, lengthwise, and place it flat side down on a cutting board. Cut into 2.5 cm (1-inch) wide wedges.

Place potatoes on a sheet tray or roasting pan and toss with oil, thyme, salt and pepper. Lay cut side down on a sheet pan or roasting pan and place on the bottom shelf of the oven.

After 15 minutes, the potatoes will begin to soften. Turn over and continue to cook for an additional 10 to 15 minutes, or until potatoes begin to brown.

Remove the potatoes from the pan with a spatula; serve warm.
