Recipe Roasted pumpkin towers

INGREDIENTS

  • 300g pumpkin
  • 20ml olive oil
  • 5g cinnamon powder
  • 4g salt
  • 6g pine nuts
  • 6g pistachio nuts
  • 150g feta cheese, cut into cubes
PREPARATION
Method
1. Skin and cut the pumpkin into cubes. Roast with olive oil, cinnamon, salt, pine nuts and pistachio nuts at 180°C for 10 minutes until soft but not mushy. Toss the feta with
the pumpkin.
2. To serve, place a portion of the pumpkin and cheese on a plate, garnish with coriander and pomegranate pearls.
