Spinach leaves (palak) medium
Rice paper sheets:- 6-8
Oil:- 2-3 tablespoons
Thai red curry paste:- 1 1/2 tablespoons
Chicken mince:- 1 cup
Lemon juice:- 2 teaspoons
Honey:- 1 teaspoon
Bean sprouts:- 1/2 cup
Heat oil in a non-stick pan. Add red curry paste and sauté for 1 minute
Add chicken mince and mix well. Cook for 4-5 minutes. Add lemon juice and honey and mix well.Dip rice paper sheets in water and shake off extra water and place on a worktop.
Place 7-8 spinach leaves on it and place a spoonful of chicken mixture on one side and spread. Top with bean sprouts and roll it. Trim the edges and cut into 4 pieces and serve immediately.
