Prep & Cook time - 20 Mins
Ingredients
Broccoli - 2 heads or florets
Garlic - 10-20 (either halved or ground)
1 Onion finely chopped
Milk - Cup
Salt & pepper to Taste
Olive oil - 1 spoon
Separate the florets of broccoli & immerse in boiling hot water for 5 minutes. Puree in the blender till its a fine paste.
In a saucepan take 1 spoon of olive oil , add garlic & saute for 30 seconds , add onion & saute till translucent
add broccoli to it & cook for 5-6 minutes (it will change color & oil will separate a bit
Add salt & pepper to taste & add milk
Bring to a boil & finito
While serving you could add fresh basil or blanched broccoli or croutons to the same
This is the easiest , healthy soup to make while in a rush
