Recipe Mexican Tomato Curry

Ingredients

Fish cut into medium size - 7
Tomatillo - 4 medium sized
Coriander powder - 4 tsp
Red chilli powder - 3 tsp
Freshly grated coconut - 1 cup
Thinly Sliced Onion - 5 or 6
Turmeric powder - 1/2 tsp
Ginger & Garic Paste - 2 Tbsp
Coriander leaves - 1/2 cup
Curry leaves - 2 Sprig
Water as needed
Salt to taste
Oil as needed

Method

Clean the fish pieces and wash them well. Add little rock salt and tumeric powder to it and mix well. Clean them once again and set aside. Take the tomatilloes and remove the husks. Cut them into medium size. Mix all the masalas powders with little water in a small bowl. Grind the grated coconut with coriander leaves by adding little water. Heat some oil in pan and fry the onions until golden brown. Add the ginger garlic paste and saute in low flame. Add the masala paste to it and add enough water. Let it boil for 15 mins and then add the grated coconut paste and tomatillos. Mix well and then add the fish pieces, let it cook on low flame until the fish is done. Fry the curry leaves with little oil and pour it on top of the curry.
