Recipe Dark chocolate cheesecake

Ingredients

  • 275g dark chocolate, chopped into small pieces
  • 1.2kg cream cheese
  • 200g granulated sugar
  • 10ml vanilla essence
  • 4 eggs
  • 175ml sour cream
  • 15g cocoa powder
For the crust base


  • 200g chocolate biscuits, crushed
  • 75ml butter, melted
  • 2.5g ground cinnamon

Preparation

1. To make the base, mix the crushed biscuits with the butter and cinnamon on a lightly greased greased baking tray. Press the mixture evenly on the base of the tin. Melt the chocolate on a water bath and spread half evenly over the crust. Place a 23cmx7.5cm ring over it to create a cake mould and set aside.

Beat the cream cheese until smooth then beat in the sugar and vanilla essence. Add the eggs one at a time. Stir the sour cream into cocoa powder to form a paste. Add to the cream cheese mixture. Stir in the remaining melted dark chocolate and mix until smooth.

Pour the filling on the base and bake in a preheated oven at 180°C for an hour. Allow to cool in the tin, then remove the tin ring and slide the cheesecake on to the plate. Serve chilled.
