Ingredients
- 275g dark chocolate, chopped into small pieces
- 1.2kg cream cheese
- 200g granulated sugar
- 10ml vanilla essence
- 4 eggs
- 175ml sour cream
- 15g cocoa powder
- 200g chocolate biscuits, crushed
- 75ml butter, melted
- 2.5g ground cinnamon
Preparation
1. To make the base, mix the crushed biscuits with the butter and cinnamon on a lightly greased greased baking tray. Press the mixture evenly on the base of the tin. Melt the chocolate on a water bath and spread half evenly over the crust. Place a 23cmx7.5cm ring over it to create a cake mould and set aside.
2. Beat the cream cheese until smooth then beat in the sugar and vanilla essence. Add the eggs one at a time. Stir the sour cream into cocoa powder to form a paste. Add to the cream cheese mixture. Stir in the remaining melted dark chocolate and mix until smooth.
3. Pour the filling on the base and bake in a preheated oven at 180°C for an hour. Allow to cool in the tin, then remove the tin ring and slide the cheesecake on to the plate. Serve chilled.
