What you need:
2 medium potatoes,
1 diced onion,
4 small eggs,
4 cloves of chopped garlic,
100 gms grated cheese,
2 tbsp olive oil,
salt and pepper to taste.
Preheat your oven to 200°C.
After scrubbing the potatoes, pass a fork through them and put them in the oven for about 40 minutes till they turn soft.
Next, in a frying pan, heat oil and sauté the onion and garlic till they turn brownish. When you notice that the potatoes are cool, cut them into half and scoop the insides. Add the scooped out potato flesh and the grated cheese along with salt and pepper on the pan and stir it.
Place the potato shells on the baking sheet and fill the mixture in.
Press the mixture inside and then sprinkle chives on top.
Now crack an egg on top of each potato. Cook this at 200°C for about 15 minutes and relish!
