Recipe Authentic Kashmiri Rogan Josh

I know Rogan Josh recipe exists but the kashmiri style Rogan Josh is differently prepared hence posting it

Ingredients

1/2 kg mutton (preferably Raan)
Sarso oil to fry
heeng a pinch
zeera 1 spoon
3 spoon red chilli powder
2 spoon dahi/ curd
2 spoon sauf powder
1 Spoon sukha adrak masala
4-5 whole cardamoms crushed

Method

Take adequate mustard oil in the cooker & heat the oil to the burning point (it will start smoking)

Cool the oil a bit & add a pinch of heeng , 1 spoon of of jeera & fry the meat.
(It will take about 30 mins or so , will turn pink , like the pic below)

After the meat is fried add 3 spoons of red chilli powder, 2-3 spoons of dahi , 2 spoon sauf powder & 1 or 3/4 spoon of sukha adrak powder

Cook the above masala for about 2-3 minutes stirring continuously

Add a glass of water & salt to taste & pressure cook ( 3 pressures) As mutton is already fried even 2 may do ,so please check in between . Thumb rule of mutton is that it takes the same cooking time as rajma or chole

Add 3-4 crushed cardamoms and stir for about 2 mins

Ready ! set! eat ! :p
