[FONT=&quot]450 grams split yellow gram[/FONT]
[FONT=&quot](yellow moong dal)[/FONT]
[FONT=&quot]6 green chillies[/FONT]
[FONT=&quot]25 mm. (1") piece ginger[/FONT]
[FONT=&quot]1 teaspoon soda-bi-carb[/FONT]
[FONT=&quot]1/2 teaspoon turmeric powder[/FONT]
[FONT=&quot](haldi)[/FONT]
[FONT=&quot]3 tablespoons powdered sugar[/FONT]
[FONT=&quot]juice of 2 large lemons[/FONT]
[FONT=&quot]2 teaspoons mustard seeds[/FONT]
[FONT=&quot]20 cloves garlic, finely chopped[/FONT]
[FONT=&quot]1/4 teaspoon asafoetida (hing)[/FONT]
[FONT=&quot]4 tablespoons oil[/FONT]
[FONT=&quot]salt to taste[/FONT]
[FONT=&quot]For the garnish[/FONT]
[FONT=&quot]2 tablespoons chopped coriander[/FONT]
[FONT=&quot]2 tablespoons grated fresh[/FONT]
[FONT=&quot]coconut[/FONT]
[FONT=&quot]2 teacups sev[/FONT]
[FONT=&quot]Method[/FONT]
[FONT=&quot]1.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Soak the dal for at least 6 hours.[/FONT]
[FONT=&quot]2.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Leave 4 tablespoons of the dal aside and grind the rest with the green chilies and ginger. [/FONT]
[FONT=&quot]3.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Add the whole (unground) dal.[/FONT]
[FONT=&quot]4.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Add the soda bi-carb, turmeric powder and salt and keep the mixture aside for at least 4 hours.[/FONT]
[FONT=&quot]5.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Spread a little mixture at a time in a thali (flat metal plate with low rim) and steam to make dhoklas. Repeat for the remaining mixture.[/FONT]
[FONT=&quot]6.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Cool and crumble.[/FONT]
[FONT=&quot]7.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Add the sugar, lemon juice and a little salt and mix well.[/FONT]
[FONT=&quot]8.[FONT=&quot] [/FONT][/FONT][FONT=&quot]Heat the oil in vessel and add the mustard seeds. When they crackle, add the chopped garlic and asafoetida and fry again for a few seconds.[/FONT]
