Recipe Manjari chocolate mousse heart with raspberry cream

Ingredients

For Manjari chocolate mousse

  • 200g Manjari dark chocolate, available in leading food stores
  • 70g sugar
  • 50g egg yolk
  • 5g gelatin
  • 300g cream
For raspberry cream

  • 250g raspberries purée
  • 1 vanilla bean
  • 283g sugar
  • 248g whole eggs
  • 38g custard powder
  • 340g butter

Preparation

1. Melt the chocolate in the double boiler. Whip the sugar and eggs. Melt the gelatin in water and add to the cream.

Fold the cream into the sugar-egg mix. Set the mousse in a mould of desired shape and chill in the refrigerator.

3.
For raspberry cream, mix together all the ingredients on a hot water bath. Cool the cream and serve it on top of the mousse.
