A popular Gujarati snack made with fermented dal and rice,tempered and steamed

INGREDIENTS
Rice 2 cups
Green gram (sabut moong) 1/2 cup
Bengal gram (chana) 1/2 cup
Black gram sattu 1/2 cup
Yogurt 1 cup
Oil 4 tablespoons
Ginger-green chilli paste 1 tablespoon
Salt to taste
Red chilli powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Cabbage, shredded 2 tablespoons
Onion , sliced thinly 1 small
Bottle gourd (lauki/doodhi), grated 2 tablespoons
Mustard seeds 1 teaspoon
Asafoetida a pinch
Curry leaves, chopped 5-6
Sesame seeds (black) 1 teaspoon
Red chillies, broken 2


METHOD
Coarsely grind rice and the dals. Take two cups of this powdered mixture in a bowl. Add one cup of yogurt, two tablespoons oil and enough lukewarm water to make a thick batter. Cover and let it ferment overnight. Preheat the oven to 200C. Add ginger-green chilli paste, red chilli powder, turmeric powder and salt and mix. Add onion, bottle gourd and cabbage and mix. Heat the remaining oil in a small pan. Add asafetida and mustard seeds. When the seeds splutter add curry leaves, dried red chillies and sesame seeds. Add this tempering to the batter and mix well. Pour batter into the mould. Put some water in a baking tray and place the mould on it. Cook in the preheated oven at 200C for twenty to twenty five minutes. Demould the handvo. Serve with green chutney.
