I have been seeing these blogs where the recipes are given in pictures & thought will try out
1) Vegetable Soup
Ingredients
Thats onion , red, yellow , green bell peppers, carrots , mushrooms , beans & cabbage (all finely chopped)
Due to rains, there is dearth of veggies , i would have liked to add broccoli, zucchini, cauliflower etc as well
Now in a pan take some olive oil & add garlic paste
Note : always use pomace olive oil for cooking, virgin & extra virgin olive oils are for salad dressing etc. that is non cooked consumption. virgin oil when cooked turns toxic.
sorry some pics are shaky , as i am cooking with one hand and clicking pics with the other
Add finely chopped onion to the wok
Add rest of the vegetables barring cabbage & mushroom(as they are softer , they require less cooking)
Add cabbage & mushrooms & cook for a bit
after a bit, add seasonings , I was out of oregano as well so i added 2 pouches of dominos oregano flakes , 2 of chilli flakes, salt, pepper, a dash of soya sauce and a sprinkling of rosemary
after spices add the puree abt 4 big spoons
add a glass of water & simmer covered for a bit
Now add a spoon of cornflour dissolved in 2 spoons water & bring it to a boil
Final result .. if you want, you can add some macroni to it as well , as this soup came quite close to ministrone soup
Note : This is a tangy soup, plz add a pinch of sugar if u prefer
