Recipe Wagyu beef with baby potatoes

INGREDIENTS

  • 10 Wagyu beef tenderloin pieces (220g each)
  • salt and pepper, to taste
  • 40ml olive oil
  • 2kg baby potatoes, cleaned
  • fresh rosemary, a bunch
  • morel sauce, to serve

PREPARATION
1. Season beef with salt and pepper. Add some olive oil. Allow to rest at room temperature for 10 to 15 mins before placing meat on the grill.

2. Cook meat on a very hot grill to your liking (10 mins for rare, 15 to 20 mins for medium and 25 to 30 mins for well done).

3. Meanwhile, prepare the baby potatoes. Place potatoes in an ovenproof dish and add salt, pepper, fresh rosemary and olive oil. Roast in an oven at 200°C for 30 to 40 mins. Once cooked, set the beef aside for 10 mins and serve with roasted baby potatoes and a drizzle of morel sauce.
