Bread and Butter Pudding

Ingredients:
� - thick white loaf
2 oz - unsalted butter
10 fl oz - double cream
2 - eggs 1 oz - castor sugar, flavoured with a vanilla pod (or plain sugar and a few drops of vanilla essence)
2 tsp - nutmeg freshly grated
2 - lemons
2 oz - sultanas
Method
� - thick white loaf
2 oz - unsalted butter
10 fl oz - double cream
2 - eggs 1 oz - castor sugar, flavoured with a vanilla pod (or plain sugar and a few drops of vanilla essence)
2 tsp - nutmeg freshly grated
2 - lemons
2 oz - sultanas
Method
- Slice the bread thickly and halve each round.
- Butter generously and arrange in a shallow, buttered dish with a pinch of lemon zest and a few sultanas between each slice. Sprinkle on the nutmeg.
- Beat the eggs well with the cream and add the flavoured sugar or plain castor sugar and vanilla essence and pour over the bread.
- Bake in a moderate oven for an hour until the top has crisped and serve hot or cold with clotted. cream.
