Ingredients

Refined flour (maida):- 1 cup
Baking powder:- 1/2 teaspoon
Soda bicarbonate:- 1/2 teaspoon
Unsweetened cocoa powder:- 3 tablespoons
Castor sugar (caster sugar):- 1 cup
Skimmed milk:- 1/2 cup
Eggs:- 3
Oil:- 1 1/2 tablespoons
Vanilla essence:- 1 teaspoon


Method

Step 1
Preheat oven to 180°C.

Step 2
Grease an eight-inch square cake tin lightly. Sift the flour, soda bicarbonate, baking powder and cocoa powder into a bowl.

Step 3
Break eggs and separate whites from yolks. Whisk the whites with a hand blender. Add a little caster sugar and whisk till stiff. Add milk to the flour mixture. Add oil, vanilla essence and mix well. Add the egg whites and fold in lightly.

Step 4
Pour the batter into the prepared tin and bake in the preheated oven for twenty to twenty five minutes.

Step 5
Set aside to cool. Slice and serve.
