Recipe Veggie Oats Pulao



Ingredients
1 cup oats
1 tbsp olive oil
½ cup chopped onion
½ tsp pepper
½ cup chopped beans
½ cup chopped carrot
½ cup chopped capsicum
1 tsp garlic paste
3 cup water/ vegetable stock
Salt to taste

Method
In a pan roast the oats for 2-3 minutes until they are slightly golden, stir continuously to keep the oats from scorching. Transfer oats to a bowl and set aside.


Add olive oil to the pan. When the oil starts to simmer, add onion, beans, carrot, capsicum and cook until softened, about 5 minutes. Stir in the garlic paste and pepper and cook for a minute.


Stir in the oats and salt. Add water if needed, cover the pan, and reduce the heat to medium-low. Cook for 5-7 minutes or until the water is absorbed. Transfer to a serving bowl and serve hot.

Serving suggestion
Add few drops of lemon to enhance flavour.


You can use tomato puree while cooking to give it a tangy twist.
