INGREDIENTS
30ml olive oil
120g red onions, chopped
10g garlic, chopped
10g almonds, peeled
3g cinnamon powder
3g cumin powder
3g coriander powder
2g cardamom
1g paprika powder
2g bay leaves
500g potatoes, cubed
150g aubergine, cubed
200g carrots, cubed
120g green bell peppers, cubed
120g red bell peppers, cubed
150g tomatoes, chopped
200g tomato purée
500g vegetable stock

PREPARATION
1. Heat oil in a large saucepan and stir-fry onions over high heat for 2-3 minutes or until they begin to soften and change colour.
2. Add garlic and cook for a few more seconds. Add almonds and sauté for a minute.
3. Turn down heat. Add all spices, bay leaves, all vegetables and tomatoes and tomato purée. Pour in vegetable stock and cook for 25 minutes on a low heat, covered, until all vegetables are fully cooked. Serve with Arabic bread or couscous
