Recipe Vegetable Stew


A delicious and nutritious veggie preparation - Vegetable Stew

Ingredients

1 bowl chopped mixed vegetables (Beans, Cauliflower, Capsicum, Potatoes, Carrots, Peas )
2 glasses of coconut milk
3 -4 chopped green chillies
1 tsp oil
1/4 tsp cumin seeds
1/4 tsp. turmeric powder
1/2 tsp red chilli powder
1/2 tsp. garam masala powder
A handful of chopped corriander leaves
Salt according to taste

Make puree:
3 tomatoes
2 onions
1 tsp. ginger, finely chopped


Method

1. Boil all the mixed vegetables in 1 glass of coconut milk with 1/4 tsp turmeric powder and salt.
2. In a pan heat the oil, put cumin seeds, when they start to splutter, add puree to it and cook for 10 minutes.
3. Then add the boiled vegetables to the puree and mix it well. Add chilli powder & garam masala powder and cook for another 2-3 minutes.
4. Finally add the remaining 1 glass of coconut milk, adjust the salt & add green chillies and cook it for few minutes.
5. Serve hot. Garnish with chopped coriander leaves.
