Recipe Tuna salad on pita triangles

TUNA SALAD ON PITA TRIANGLES
A blend of tuna, mayonnaise and crisp vegetables served with toasted pita.

INGREDIENTS
Pita bread, cut into triangles and toasted crisp12

Salad

Tuna fish (canned) 100 grams

Mayonnaise 2 tablespoons

Yogurt 1 tablespoon

Lemon juice 1 tablespoon

Yellow capsicum, seeded and chopped 1/4 small

Red capsicum, seeded and chopped 1/4 small

Spring onion bulb , chopped 1

Fresh parsley, chopped 1 teaspoon

Salt to taste

Black peppercorns, crushed 5-6

For garnishing

Kalamatta olives, halved 6

Fresh coriander leaves a few sprigs

METHOD
In a large bowl take mayonnaise, yogurt, lemon juice, yellow capsicum, red capsicum, spring onion, parsley and salt. Mix well.Lightly crumble tuna and add to the salad mix. Toss and add crushed peppercorns. Toss again. Place a spoonful portion of tuna salad on each toasted pita triangle or chapati triangle. Garnish with olives and a sprig of coriander. Serve immediately
