INGREDIENTS
- 600g tuna sako (sashimi-grade yellow fin tuna)
- For the sesame sauce mix together:
- 20ml dark soy sauce
- 10ml light soy sauce
- 20g sugar
- 50ml sesame oil
- 10g sesame seeds
- 5g red chilli flakes
- 20ml rice vinegar
- 5g each, garlic and ginger, chopped
- 10g spring onion, chopped
- For wakame salad, mix all ingredients and stand for 10 mins:
- 200g wakame* (edible seaweed), cut
- 200g each, cucumbers and carrots, julienned
- 100g crab meat
- 40g red tobiko* (flying fish roe)
- 100g Japanese mayonnaise*
- salt and pepper, to taste
- sakura cress* for garnishing
PREPARATION
1. Pan-sear tuna, and then marinate it in a vacuum bag with sesame sauce for 10 mins.
2. Cut tuna into thin slices, pour sesame sauce on top. Serve with wakame salad. Garnish with sakura cress.
