1kg tomatoes, deseeded and diced
20g garlic, chopped
1 bunch fresh basil, chopped
salt and pepper, to taste
5ml balsamic vinegar
25ml olive oil
800g country bread loaf, sliced
50g Parmesan cheese flakes
300g rocket salad, to serve
1. Mix tomatoes, garlic and basil in a bowl and season to taste. Add vinegar and olive oil and mix well.
2. Toast bread slices then spoon tomato mixture on top of each slice of bread and top with Parmesan flakes. Serve with rocket salad.
