Toast cups

Ingredients
  • 12 pieces of toast (white or brown)
  • 1/4 c butter
  • 6 eggs
  • 1 potato shredded
  • 1/2 cup cheddar cheese
  • 3 tbsp evaporated milk
  • 1/4 cup cooked mince meat (any style u like) or cooked & shredded chicken.
  • 2 tbsp chopped coriander + 1 chopped tbsp mint.
  • 2 green chilli finely chopped
  • Salt & pepper to adjust your taste
  • 2 tbsp butter
Directions
  1. Roll out the toast flat wth a rolling pin & take off the sides.
  2. Brush with butter.
  3. Pre heat the oven to 350 deg.
  4. Press in the toast & set them in a cup cake pan & bake for 10 min or until golden
  5. Remove from heat.
  6. Beat the eggs with milk until fluffy.
  7. Add in the cheddar, mince, coriander, green chilli Salt & pepper & combine to mix all.
  8. In a fry pan heat the 2 tbsp butter & fry the shredded potato till golden.
  9. Add the egg mixture & make scrambled eggs but do not dry it out completely.
  10. Fill in each toasted cups with eggs put under hot grill till slightly golden from the top.
  11. Serve hot at tea times.
