Prime VIP
Stir – fry vegetable with 5 – spice noodles
For the noodles
1 kg Plain Flour
2 egg
1 Tbsp 5 – spice powder
1 Red pepper (Diced)
Salt
For the stir fry
200 gms Button Mushrrom
100 gms Shitake Mushrooms
100 gms Baby Corn
10 – 15 Spinach leaves
10 – 15 Asparagus stalks
3 – 4 Spring Onions
10 Broccoli Florets
Coriander
3 – 4 Star Anise
4 – 5 All Spice
1” inch Cinnamon
2 – 3 Sichuan Peppers
2 tbsp Oil
Method
For the noodles , in a bowl add plain flour , salt , egg , five spice powder and knead with water until a stiff dough .
Roll out the dough , fold it and roll again repeat the process twice .
Dust the working surface with flour and cut the rolled dough into thin strips , dust with flour and keep it aside .
In a deep pan boil water , add the noodles and cook until just done , drain it and keep it aside, add a little oil to prevent the noodles from sticking .
Blanch broccoli for 3 -4 mins , asparagus for about 2 min and mushrooms for a min drain and keep it aside .
For the stir fry , heat oil in a wok , add the spices sauté for about 1 min and then add the blanched vegetables, baby corn ,spring onion just before taking it off the gas add spinach sauté and keep it aside .
In a wok heat oil ,add chopped garlic sauté , add onions sauté for about 5 mins , add the diced peppers sauté then add the noodles and sauté.
Serve hot with the stir – fry noodles .
