Recipe Steamed scallops

INGREDIENTS
160g scallops, cleaned
40g vermicelli
3ml corn oil
10g garlic, chopped
3g white pepper
2 tbsp red and green bell peppers, finely chopped
170g XO sauce (available at Chinese supermarkets across the UAE)
2 tbsp soy sauce
3g fresh coriander, for garnishing

PREPARATION
1. Slit the scallops on top as in the picture and steam them for 3 minutes. Set aside. Cook the vermicelli according to the directions on the package. Drain and set aside.

2. In a pan, heat oil and sauté garlic, white pepper and bell peppers for 2 minutes. Remove from heat and add XO sauce.

3. To serve, put vermicelli on plate and drizzle with soy sauce. Place scallops on top of the vermicelli and drizzle sauce on top. Garnish with coriander leaves.
