2 large Baingan
1/2 cup Curd
3 cloves crushed Garlic
1/4 inch Cinnamon
1/4 tsp Garam masala
2 tsp Ghee
1.Peel the onion and keep aside the first layer of the onion and finely chop it.
2.Heat ghee in a pan and saute the onion and garlic until becomes soft.
3.Add all the spices and saute until aromatic. Keep aside the sauteed ingredients.
4.Put the baingan over the heat flame for 2-3 minutes until all sides are cooked and becomes pulpy.
5.Remove the stem and beat the pulp into bharta.
6.Add the garam masala, curd and sauteed ingredients to the bharta , stir well.
7.Allow to cool the ingredients.
8.Heat the coal until becomes red color and put the onion skin around the skin around the coal.
9.Place the coal in the dish and put the ghee to emit the smoke.
10.Serve with rice.
