Sautéed beef in black bean sauce

Prep time: 10 mins
Cooking time: 10 mins
(serves 2)

For the sauce
  • 15ml chicken stock
  • 5ml oyster sauce
  • 5g sugar
  • 15ml light soya sauce
  • 3ml dark soya sauce
  • 5g cornflour
For the beef stir-fry

  • 30ml corn oil
  • 500g beef sirloin, cut into strips
  • 5g black bean paste
  • 5g garlic, minced
  • 5g red chilli, chopped
  • 10g onion, cut into small cubes
  • 20g spring onion, cut into strips
  • 15g each green, yellow and red peppers, cubed
  • 10g carrots, julienned
1. In a small bowl mix all the ingredients for the sauce and
set aside.
2. Heat oil in a wok and pan-fry beef over high heat for
2 minutes. Remove and keep warm.
3. Stir-fry black bean paste, garlic, chilli, onion, spring onion, peppers and carrots until fragrant.
4. Add beef and the sauce and flash fry on high heat for
a minute. Serve hot.
