RICE PANKI

INGREDIENTS
Rice flour, sieved
2 cups
Salt
to taste
Ginger paste
1/2 teaspoon
Green chilli paste
1 teaspoon
Soda bicarbonate
1/2 teaspoon
Yogurt, beaten
4 tablespoons
Banana leaves , cut into 5"dia.or square

Oil
1/4 cup


METHOD
Take rice flour in a bowl. Add salt, ginger paste, green chilli paste, soda bicarbonate and yogurt and mix. Add water and mix well ensuring there are no lumps. The consistency should be quite thick.Heat a tawa and add a little oil. Pour the batter over banana leaves and spread a little. Fold into half and place them on the hot tawa. Cook, turn the sides and cook till both sides are well cone. Serve hot in the leaf itself.
