Rice Beer Recipe
- 1 cup rice , uncooked (not instant)
- 1/2 cup onion, chopped
- 1/2 cup red pepper, chopped
- 1/2 cup butter, melted
- 16 ounces chicken broth (canned is okay)
- 3/4 cup beer
- 1/4 teaspoon thyme
- Saute onion and pepper in butter until tender.
- Add chicken broth, rice, beer, thyme and salt and pepper to taste.
- Bring to a boil, cover and reduce heat.
- Simmer for 30- 40 minutes until liquid is absorbed and rice is done.
