POTATO COCONUT MAGIC

INGREDIENTS
FOR 6 PCS


1. BOILED POTATOES ( 5 MEDIUM PCS)

2. GRATED COCONUT ( 1 SMALL BOWL)

3. GRATED CARROT ( HALF CUP)

4. CURRY LEAVES ( 6-7 PCS)

5. COARSELY CRUSHED PEANUTS ( 1 TABLESPOON)

6. CHOPPED GREEN CHILLI ( 1 TSP)

7. BREAD CRUMBS ( AS REQUIRED FOR COATING)

8. ALL PURPOSE FLOUR /MAIDA OR CORNFLOUR ( 2 TABLESPOON)

9. SALT ( AS PER TASTE)

10. BLACK PEPPER ( AS PER TASTE)

11. RED CHILLI POWDER ( HALF TSP)

12. WHOLE SPICES / GARAM MASALA ( 1/4 TSP)

13. WATER ( AS REQUIRED)

14. OIL ( FOR FRYING)

METHOD
STEP-1


1. In a bowl take boiled potatoes and mash them properly.
2. Add grated carrot, chopped green chilli, salt and pepper in it and mix it properly
3. Keep it aside.

STEP-2

1. Take a pan. Pour 2 tsp oil in it. Once oil is heated put curry leaves in it.When curry leaves starts crackling add grated coconut in it.Saute it in low flame for 1-2 mins.
2. Now add coarsely crushed peanuts, salt, red chilli powder, garam masala in it and mix it properly. ( Note : for crushed peanuts - Roast peanuts, remove skin of it and grind it little bit. Don't crush it completely, chunks of peanuts should be left)
3.Let it cook in low flame for 1 -2 min. Remove from flame and keep it aside.

STEP-3

1.In a bowl mix maida/cornflour and water to form a smooth batter.
2. Keep it aside.

STEP-4.

1. Take some of the potato mixture and roll it properly using your palms.

2. Now flatten it from center and put a spoonful of coconut mixture in centre.

3. Roll it again with light hands to give it a proper shape.
4. Coat the balls properly in maida mixture and then roll it in bread crumbs so that breads crumbs are coated properly in it.
5. Repeat it with rest of the mixture.
6. Now take a deep pan. Pour oil in it. Once oil is heated put prepared potato coconut balls in it and cook it it low flame till it turns golden brown.

7. Once it turns golden brown, strain it on tissue paper so that extra oil is soaked.
