Penne Al Forno

30ml butter, plus extra for greasing
2 eggs, beaten
10ml mustard powder
salt and nutmeg, to taste
500ml full-cream milk
400g mature Cheddar cheese, grated
1 bunch of spring onions, chopped paprika, to taste
1. Preheat oven to 180°C and grease an ovenproof dish with butter. Cook penne in a large saucepan of boiling salted water until al dente. Drain pasta and return it to the saucepan. Stir in butter and eggs.
2. Mix mustard powder with 30ml of boiling water then stir
it into the pasta. Season to taste with salt and nutmeg.
3. Stir in milk, 300g of the cheese and spring onions until everything is thoroughly mixed, then spoon it into the prepared dish.
4. Sprinkle the remaining cheese and paprika on top. Bake for 30-45 minutes or until golden brown and set.
