INGREDIENTS
- 6 medium-sized prawns, peeled (with tail)
- 4 tbsp Thai red curry paste
- 2 tbsp olive oil for cooking
- 5 garlic cloves
- 2 large tomatoes, skinned, de-seeded and chopped
- zest and juice of 1 lime
- salt, to taste
- 200g angel hair pasta, cooked
- fresh coriander, chopped to garnish
- red chilli, thinly sliced to garnish
PREPARATION
1. Mix together prawns and red curry paste in a bowl, cover with cling film and refrigerate for 2 hours.
2. In a large saucepan, heat oil and sauté garlic on low heat until slightly golden, then add tomatoes, lime zest and
juice. Increase heat, let sauce bubble and reduce, about
8 minutes. Season.
3. Add prawns. When sauce begins to bubble again, turn heat down and let cook gently for another 3 minutes.
4. Add pasta and toss. Add a little water to loosen up sauce. You may need to do this a few times but don’t add too much at once as you run the risk of a watery sauce.
5. Move pasta and prawns into a serving dish, sprinkle coriander and chilli slices on top and serve.
