Pan-fried hammour

Serves 2
Prep time: 10 mins
Cooking time: 20 mins

800g hammour
5g each, red chilli, spring onion, coriander leaves, chopped
oil, for cooking
1 stalk of lemongrass (cut lengthwise)
2 lemon leaves

For the sauce
150g chicken stock
24g coconut milk powder
44g satay sauce
3g sugar
10g yellow curry paste
6g fish sauce
3g corn flour

1. Mix together sauce ingredients until well combined.

2. Heat oil in a wok; pan-fry the hammour until cooked then drain. Discard oil.

3. Heat 1 tsp oil in another wok. Stir fry chilli, spring onion, coriander, lemongrass and lemon leaves until fragrant. Add sauce and mix well. Return hammour to wok. Serve.
