Palak Rice ….
½ bunch palak (cut into small pieces)
5-6 pods of Garlic
Small piece of Ginger
1 chopped Onion
Few curry leaves
1 Potato (boiled and mashed)
1 cup Basmati Rice
½ tsp Garam masala Powder (optional)
For Seasoning :
1 tsp Mustard seeds
½ tsp Urud dal
½ tsp channa dal
½ tsp Green & Red chillies (cut into pieces)
First wash and cut the palak into small pieces and keep aside.
Then cook the basmathi rice and set aside.( You can add coconut milk while boiling rice. It tastes Rich.)Add little salt while boiling rice.
Take a pan, pour some oil and when the oil is hot, add all the seasoning ingredients and fry till done.
Now add the curry leaves ,ginger ,garlic, onions, tomatoes (one by one).add cut palak and mix nicely and close with a lid. When it is done, put the mashed potatoes and mix it. add garam masala powder if you want and salt.mix it well. Take it out from fire and add the rice and mix it well.
Serve with raita
