Pad Ga-prao Nua

For the chilli paste, coarsely pound together:
10g each, red and yellow chillies
40g garlic, peeled
20g small bird chillies
For the stir-fry:
80ml cooking oil
700g minced beef
100ml chicken broth
20ml light soy sauce
60ml dark soy sauce
10ml oyster sauce
sugar, to taste
50g holy basil leaves, plus a few deep-fried for garnishing
30g green and red chillies, sliced
1. Heat oil in a wok over a very high heat. Add chilli paste and stir until brown. Do not overcook. Add beef and sauté for
a minute. Add chicken broth and simmer for 2 minutes.
2. Add all the sauces and sugar. Continue to simmer until the beef is done. Then add basil leaves, chillies and toss well.
3. Place the prepared beef on a warm plate. Garnish with deep-fried basil leaves.
