ORIENTAL STYLE STIR FRIED VEGETABLE PARATHA

INGREDIENTS
Refined flour (maida)
1 1/2 cups
Oil
3 tablespoons
Salt
to taste
Onion , sliced
1 medium
Cabbage, shredded
1/4 small
Carrot, grated
1 medium
Soy sauce
1/2 teaspoon
Sugar
1/2 teaspoon

METHOD
Sieve refined flour in a bowl. Add one and half tablespoons oil, salt and sufficient water to knead into a soft dough. Cover with a damp cloth and rest for thirty minutes For the stuffing, heat the remaining oil in a pan, add onion and sauté till translucent. Add cabbage and carrot and stir fry for five to seven minutes. Add soy sauce, sugar and salt and mix well, remove from heat and set aside to cool. Divide into eight equal portions. Divide the dough into eight equal portions and roll out each portion into small rotis. Stuff each roti with one portion of the stuffing, gather the edges and roll into a ball. Further roll out into a thick paranthas. Heat a tawa. Place a parantha on it and roast for half a minute. Flip and drizzle oil on the upper side. Flip again and drizzle some oil on the other side too. Continue to roast till both the sides are evenly lightly browned. Serve hot.​
